Pancake Recipe

Pancake is a delicious recipe for weekend breakfasts. It is easy to make the batter. Mix dry ingredients with liquids, and it is ready to bake pancakes. You can make it any sizes and shapes and also you can serve whatever you want. I serve with dried raisins, walnuts and molasses.

NOTES:

  • I use 60 ml of batter for each pancake, and make it 13-15 cm.
  • You can use pancake pan or non-stick pan, doesn’t matter.
  • If you serve with cheese, olives or etc. decrease the amount of sugar 1 tsp.

Ingredients:

  • 140 gr flour (1 cup)
  • 8 gr baking powder (2 tsp)
  • 1/4 tsp salt
  • 25 gr granulated sugar (2 tbsp)
  • 1 large egg
  • 255 ml milk (1 cup + 1 tbsp)
  • 30 gr butter (2 tbsp)

Directions:

  1. Melt the butter and let it cool.
  2. In a large bowl mix together flour, sugar, salt and baking powder.
  3. In another bowl beat together milk, egg and melted-cooled butter.
  4. MAke a well in the senter of flour mixture and add liquids and stir with a spatula until combined. Do not over mix. Batter should have some small lumps.
  5. Heat non-stick pan. Brush pan with oil or melted butter.
  6. Pour over 60 ml of pancake butter (a small ladle) onto yhe hot pan.
  7. When bubbles start to appear on the top surfaces of the pancakes (2-3 minutes), turn over. Cook until lightly browned (about 1-2 minutes).
  8. Repeat it with remainig butter.
  9. Serve immediately with honey, molasses, syrup or whatever you want.
