Orange muffins recipe with fresh orange, orange zest and lavender aroma. Lavender makes the taste really different and delicious.

I use lavender and white chocolate frosting, it is not necessary but i suggest you to do the frosting. Hope you will try.

NOTES:

  • For the measurement cups which i use please look at “measurements” .
  • Serves 12 muffins.
  • I used dried lavander.
  • Rum is optional. If you don’t want skip it.
  • I suggest you to do the frosting first and refrigerate it. So you don’t have to wait for frosting to get cool after muffins done.

Ingredients:

  • 100 gr sugar (1/2 cup)
  • Zest of 1 orange
  • 295 gr flour (2 cups + 1 tbsp)
  • 8 gr baking powder (2 tsp)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 240 ml fresh orange juice (1 cup)
  • 2 tbsp fresh lemon juice
  • 2 tsp lemon zest
  • 115 gr butter (1 stick)
  • 2 eggs (Large)
  • 1 tbsp rum (Optional)
  • 1 tbsp dried lavender

Lavender And White Chocolate Frosting:

  • 80 ml milk (1/3 cup)
  • 1 tbsp dried lavender
  • 75 gr butter (room temperature)
  • 80 gr white chocolate
  • 80 gr powdered sugar (8 tbsp)

Directions:

  1. Melt the butter. Add dried lavender and wait for bubbles on top of mixture and take away from heat. Let sit until cool. Than strain it when cooled. We will use strained and cooled butter.
  2. Pre-heat oven to 190º C (375ºF) Butter the muffin pan and set aside.
  3. In a bowl, mix sugar, orange zest and lemon zest with your hand. Sugar must be glossy.
  4. Add flour, baking powder, baking soda, salt and whisk. Set aside.
  5. Another bowl beat together orange juice, lemon juice, rum, eggs and strained butter.
  6. Add liquid mixture to flour mixture and whisk until homogenized.
  7. Divide the batter into muffin cups and bake about 20 minutes. You know your oven so be cafefully while baking.
  8. Take from the oven and let the muffins to cool

For Frosting:

  1. Put milk and lavender to a small souce pan than bring it to boil on medium heat. Once boiled take away from the heat and let it cool.
  2. In a heat proof bowl placed over a saucepan of simmering water, put the white chocolates. Stir until melted than let it cool.
  3. Another bowl beat the butter and powdered sugar until fluffy.
  4. Strain cooled milk and add butter mixture. Than add melted and cooled white chocolate. Whisk until smooth. When its done cover with a plastic wrap and refrigerate it about 2-3 hours.
  5. When cooled put frosting to piping bag and decorate the cooled muffins.
