Spinach Quiche VIDEO RECIPE

Spinach Quiche recipe flavors the savory custard filling with mushrooms, spinach, garlic, and grated cheese. It is good to serve at room temperature, or even cold.

NOTES:

  • For the measurement cups which i use please look at “measurements” .
  • Use 20-23 cm pan.
  • Butter and water must be cold.
  • It is important to  use food processor when making quiche or tart crust.

Ingredients For Crust:

  • 175 gr flour (1 cup + 4 tbsp)
  • 1/2 tsp salt
  • 1 tsp granulated sugar
  • 115 gr cold butter (7,5 tbsp)
  • 30 – 60 ml ice water (2-4 tbsp)

For Filling:

  • 300 gr spinach
  • 300 gr mushroom
  • Half cup of chopped parsley
  • 2 garlic clove
  • 1/2 su cup grated cheese (parmesan or etc.)
  • 1-2 tbsp butter
  • 200 ml heavy cream
  • 2 large eggs
  • 60 ml milk (1/4 cup)
  • Salt, blackpepper and nutmeg

To Make Crust:

  1. In a food processor put the flour, salt, sugar and butter. Pulse the button until the mixture is crumbly about 10-15 seconds.
  2. Pour 30 ml (1 tbsp) of ice water and pulse again until the dough starts to clump together when pinched. Add remaining water, if necessary. Do not process more than about 15  seconds.
  3. Turn the dough out onto your work surface and make a dough ball. Cover with a plastic wrap and refrigerate it at least 1 hour or over night
  4. Pre-heat your oven 200º C (390º F)
  5. Roll out the pastry to fit 20-23 cm pan on a floured surface.
  6. On a lightly floured surface, roll out the pastry to fit into a 8 or 9 inch (20 to 23 cm) pie pan.
  7. When it is the right size, take your pie pan, flip it over, and place it on the rolled out pastry. The pastry should be larger than pan. Roll the pastry arround your rolling pin and unroll onto the top of the pan. Press the pastry onto the bottom and sides of the pan with your hands gently. Trim the edges of pastry.
  8. Put a parchment paper onto the crust and fill it with beans. Bake crust about 15 minutes.
  9. After 15 minutes remove the crust from oven and remove parchment paper and beans.
  10. Than continue to bake the crust for about 5-6minutes or until the pastry is dry and lightly browned.
  11. Remove the crust and let it sit room temperature.
  12. Reduce the oven temperature to 190º C (375º F).

For Filling:

  1. Heat your pan on a medium heat and melt the butter. Add the chopped mushrooms. Saute the mushrooms and add diced garlic, a pinch of salt and parsley.
  2. Add spinach. Saute it with mushrooms.
  3. Add salt, balckpepper and nutmeg. Filling is ready. Let it cool.
  4. In another bowl whisk eggs. Add cream and milt and continue whisking. Add a pinch of salt and nutmeg.

Assemble:

  1. Put spinach and mushroom mixture onto the crust.
  2. Sprinkle grated cheese.
  3. Pour over the liquid mixture and bake it about 20-25 minutes until nicely browned.
