NOTES:

  • For the measurement cups which i use please look at “measurements” .
  • Use 26-28 cm pan.
  • Butter and water must be cold.
  • It is important to  use food processor when making quiche or tart crust.
  • You can use any vegateble instead of leek.

Ingredients For Crust:

  • 270 gr flour (2 cup – decrease 1 tbsp)
  • 1 tsp salt
  • 135 gr cold butter (9 tbsp)
  • 80 ml ice water (1/3 cup)
  • 2 egg yolks (Medium)
  • 1 egg white (For brush the crust)

For Filling:

  • 350 gr washed, cutted leeks (5-6 leeks)
  • 3-4 tbsp oliveoil
  • 3 cloves of garlic
  • 100 gr feta cheese (Or any cheese you want) / About 1 cup
  • 200 ml heavy cream (1 cup)
  • 2 eggs ( Large)

To Make Crust:

  1. In a food processor put the flour, salt, sugar and butter. Pulse the button until the mixture is crumbly about 10-15 seconds.
  2. Pour 80 ml  of ice water and egg yolks pulse again until the dough starts to clump together when pinched.
  3. Turn the dough out onto your work surface and make a dough ball. Cover with a plastic wrap and refrigerate it at least 30 minutes.
  4. Pre-heat your oven 180º C .
  5. On a lightly floured surface, roll out the pastry to fit into a 26 to 28 cm) pie pan.
  6. When it is the right size, take your pie pan, flip it over, and place it on the rolled out pastry. The pastry should be larger than pan. Roll the pastry arround your rolling pin and unroll onto the top of the pan. Press the pastry onto the bottom and sides of the pan with your hands gently. Trim the edges of pastry.
  7. Put a parchment paper onto the crust and fill it with beans. Bake crust about 20-25 minutes.
  8. After that remove the crust from oven and remove parchment paper and beans.
  9. Than continue to bake the crust for about 10-15 minutes or until the pastry is dry and lightly browned.
  10. Remove the crust and let it sit room temperature.

For Filling:

  1. Heat your pan on a medium heat and add olive oil. Add the cutted leeks. Saute the leeks and add diced garlic, a pinch of salt. Saute it until softened.
  2. Let it cool.
  3. When leeks cooled pour it on a large bowl. Add chesse and mix. Add cream and eggs and mix until homogenized.
  4. Let it sit.

Assemble:

  1. Put leek mixture onto the crust and bake it about 20-25 minutes until nicely browned.
