Sugar-Free pudding is healty alternative to rafined sugar pudding recipes. Basicly needs 2 ingredients, milk and dried figs. But i add some spices and orange zest. Hot milk fermented by figgs and it becomes like a mousse. No need to add sugar. It is delicious. Give a try. See the notes below.

NOTES:

  • For the measurement cups which i use please look at “measurements” .
  • I use 4 large figs,it is about 90 grams. I your figs are small increase the amount of it.
  • You can use orange or lemon zest. I use orange zest.
  • If your figs are rather dry put them into warmish water for 30 minutes before you use.
  • This recipe is for two persons.

 

Ingredients:

  • 400 ml milk ( 1,5 cupı + 3 tbsp)
  • 2 tbsp heavy cream (optional)
  • 90 gr dried figs (4-5 figs)
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tbsp orange zest
  • Walnut or almond for decorating (optional)

Sugar-Free Pudding

Directions:

  1. Chop dries figs.
  2. In a souce pan bring to boil milk and cream.
  3. Add chopped figs, ginger and cinnamon.
  4. Blend it until smooth.
  5. Add orange zest and blend a bit more.
  6. Cover with a towel and let sit for 3 hours room tempereture.
  7. After 3 hours cover with plastic wrap and refrigerate it. Must be completely cold. (Over night will be better)
  8. Decorate with almonds and walnuts. Ready to serve.
