Sugar-Free Cake Recipe is a simple layered cake and a good, healty alternative. I made this for birthday.

Its cake is not like a sponge cake i have to say it first. But it is delicious and tastes like wet chocolate cake. Chestnut frosting is sugar-free and fat-free too.

Sugar-Free Cake Recipe is completely healty choice for a cake.

NOTES:

  • For the measurement cups which i use please look at “measurements” .
  • Use 20 cm springform pan.
  • In a large pot add enough water to cover the chestnuts and bring to a boil.Cook for 25 minutes. Drain the chestnuts and peel off the shells.
  • If you want more sweet cake add more dates.
  • If you use dried dates, let them sit in a warmish water for 30 minutes. Than strain them. We will use this water for chestnut frosting.

Ingredients:

For Sugar-Free Cake Recipe

  • 1/2 of avocado
  • 2 bananas (Large)
  • 8 Medijoul dates (Medium)
  • 2 eggs (Large)
  • 5 gr grated coconut (1 tbsp)
  • 50 gr cocoa-powder ( 1/2 cup)
  • 100 ml milk ( About 1/2 cup)
  • 50 gr almond, nut or walnut flour  ( 1/2 cup)
  • 8 gr baking powder (2 tsp)

Sugar-Free Chestnut Frosting:

  • 2 cups boiled chestnuts
  • 200 ml heavy cream
  • 9 Medijoul dates
  • 1/2 tsp cinnamon
  • Water (Which dates sit in. Add slowly)

Directions:

For Cake:

  1. Pre-heat your oven 180º C. Butter your cake pan and set aside.
  2. Put all ingredients your food processor and blend it until smooth.
  3. Pour the mixtureinto the pan and bake 20-25 minutes until a toothpick inserted into the center of the cake comes out clean.
  4. Let it cool room temperature.

Chestnut Frosting:

  1. Put all ingredienst in a food prosessor (Except water)Blend it until smooth.
  2. If it has solid consistency add 1-2 tsbp water and whisk. Add more water if needs.
  3. Cover with a plastic wrap and let it sit room temperature until cake cooled.

Assemble:

  1. Cut the cake layers in half horizontally. You will have 2 layers.
  2. Place one layer onto cake pan, brush with some milk if you want. It is not necessary and spread about half of chestnut frosting.
  3. Place the next layer and spread remaining frosting or use piping bag for decorate like i am. You can see in the video below how i decorate.
  4. Refrigerate it. Take it to room temperature about 30 minutes before you serve.
