Bitesize cookies a delicious bergamot flavour with ginger. Cookies are tender and melt in your mouth.

By the way you can ignore the tea and ginger and add what flavour you want. Only vanilla also be the good version of this cookies. Bitesize cookies are not difficult to make, i will write all the details. You can serve thme with tea, coffee or milk. Hope you love.

NOTES:

  • Makes 2-3 cm in diametr, 60 bitesize cookies.
  • Use powdered sugar. You can use granulated sugar either but only granulated sugar doesn’t make the same consistency.
  • If your tea leaves big you can ground it in your food processor. Or you can use bergamot flavour tea bags.

Ingredients:

  • 125 gr butter (Room temperature)
  • 80 gr powdered sugar (1/2 cup)
  • 60 ml vegetable oil (About 1/4 cup)
  • 1  large egg
  • 280 gr flour (2 cups)
  • 4 tsp bergamot flavoured tea
  • 1/2 tsp ground ginger
  • 1/2 tsp baking powder

Directions:

  1. Pre-heat your oven at 350º F (180ºC)
  2. In a large bowl mix room temperatured butter, oliveoil, egg and tea. Wait for 10 minutes for a good tea flavour.
  3. After ten minutes sift the powdered sugar, flour, baking soda and ground ginger onto the butter mixture. Knead or mix with o spatula until the dough comes together.
  4. When dough comes together stop kneading. Do not over knead.

In both methods, the cookies melt in the mouth are approximately the same. But the cookies you have left in the fridge are more tender than the classic method.

Classic method: (Mini cookie balls)

  1. Cut some of the small pieces from your cookie dough, roll it with your hands and give it a ball shape. Lay a greased paper onto your oven tray and put small cookie pieces 3-4 cm apart.
  2. Bake for 10-12 minutes until the edges turns lightly brown. Top of cookies shouldn’t turn brown.
  3. Take away baked cookies from the oven and sift powdered sugar on top of them immediately. Let it cool.

Left in the fridge:

  1. Cut the dough 2 or 3 pieces. Place each of dough on a parchment paper. Smooth and roll each dough 2 – 3 cm diametr.
  2. Cover the rolled dough with a plastic wrap. Refrigerate it at least 2 hours. If you don’t have much time put them to your freezer and wait for 30 minutes.
  3. Take away the dough from your refrigerator. Cut the cooled dough into pieces ( 1 cm thick cookies)
  4. Lay a greased paper onto your oven tray and put small cookie pieces 3-4 cm apart.
  5. Bake for 10-12 minutes until the edges turns lightly brown.
  6. Take away baked cookies from the oven and sift powdered sugar on top of them immediately. Let it cool.
