Thyme Bread Recipe

Thyme bread recipe smooth, tasty and a good thyme flavoured recipe. I shaped as small breads, you can shape like tiny breads, whole bread or sandwich breads.

NOTES:

  • For the measurement cups which i use please look at “measurements” .
  • I prefer thymes for flavour. You can add rosemary, parmesan cheese or etc.
  • If you make smaller or bigger bread shapes than me don’t forget to care about baking minutes. It will change.
  • I use bread flour with whole wheat flour. You can use full of bread flour or change whole wheat flour with other flours which you want with same amount.
  • If you use stand mixer mix yeast and water than add all liquid ingredients, than add flours and salt, process until smooth. Than add thymes, knead until homogenized. After that you can continue to make to bread from direction 6 below.

Thyme Bread Recipe

 

Ingredients:

  • 300 gr flour (2 cups + 2 tbsp)
  • 200 gr whole wheat flour (1 tbsp less than 1,5 cups flour)
  • 1 tsp honey (you can use granulated sugar instead)
  • 30 gr butter room temperature (2 tbsp)
  • 10 gr salt (1 + 1/4 tsp)
  • 8 gr instant dry yeast (2,5 tsp)
  • 240 ml milk (1 cup)
  • 120 ml water (Half cup)
  • 1 tbsp dried thyme

Thyme Bread Recipe

 

Directions:

  1. Mix yeast an water in a cup. Set aside.
  2. Sift flours in a big bowl. Make a hole in the middle and add yeast-water mixture, milk, honey and butter. Sprinkle the salt edges of flour. Start kneading until smooth.
  3. This will be a sticky dough. Don’t add extra flour. Knead well, it will get nice soft and smooth consistency. It will take about 10 minutes.
  4. Cut the ready dough into 6 pieces or 8 pieces for smaller breads. Make dough balls, sprinkle some flour on the workbench and put the dough balls. Sprinkle some flours on top of them and cover with a plastic wrap, let it sit for about 30-40 minutes.
  5. After 30-40 minutes, pre-heat your oven to 200º C.
  6. Sprinkle some flour on workbench and take each ball to give its shape. (Look at the video for the shape)
  7. Put the shaped breads on a baking tray with parchment paper. Cover with o towel  Let them sit until double sized. It will take 1-2 hours depens on room temperature.
  8. When its double sized sift some flour on top and score the breads with a razor blade. Don’t wait too much to bake them from this point.
  9. Put 1/4 cup of hot water into the bottom of oven with o heat proof tray or cup. Than put the breads and bake for 18-20 minutes until edges and top golden. Time depends on your oven heat and shapes of breads. Be carefull after 15 minutes.
  10. When baked take off the tray and let them sit in a wire rack until cooled.
